Just because I’m not posting weekly menu’s does not mean that I am not cooking! In fact, I’ve still been cooking every week, and just tonight I made a Shepard’s Pie. Since this recipe for Shepard’s Pie is SO easy, I decided to post if for all of you. It’s my own variation of a Martha Stuart recipe I found a long time ago.
1-1.5 lb. ground turkey or beef (I use a 93/7 turkey cause I don’t eat the red meats or pork)
1 can green beans
1 can sweet peas
1 can sweet corn kernels
I can cream of chicken soup
*optional: shredded cheddar cheese
-Boil 8 medium potatoes in a pot of very salty water
-While the potatoes boil, brown your ground turkey with oregano and garlic salt to preference
-Once meat has browned, mix in glass bakeware (that has a lid) with the cans of green beans, peas, corn, and cream of chicken soup
-Drain potatoes once they have boiled to very soft and then mash with butter and a little cream or milk
-Cover meat and veggie mixture with a layer of potatoes
-Sprinkle cheese over the potatoes
-Cover glass bakeware with a lid and put in the oven for 20-25 min at 375 degrees
**I use organic canned veggies for this recipe. I am looking into revamping this idea once I do some further research on BPA’s on canned food items. In the meantime, I’m still using the canned organic veggies from Publix. I also make my own mashed potatoes, however you can use already made or instant mashed potatoes. It’s your preference. I prefer using the yukon gold potatoes as they make a GREAT mashed potato.
